I love bananas. I eat them in smoothies, oatmeal, plain, in milk, in cereal, on toast, and most deliciously in banana bread.
My friend Bethany was raving about this simple and delicious banana bread recipe she found that had chocolate chips in it. So, naturally, I was on board. Chocolate chips are practically a food group to me…or what is it now? Not food groups…it is on my “myplate.”. Ha ha.
Well, my friends, I have to share this recipe with you. I have actually gone through my blog archives three times because I simply cannot believe I haven’t shared this yet.
I have one in the oven right now. This time, I tried something new…I added pumpkin, chia seeds, and white chocolate chips.
Anyway, I am naming this Bethany’s Banana Bread even though she got the recipe online, because she doctored it and introduced it to me.
3 or 4 ripe bananas, smashed
1/3 cup melted butter
1 cup sugar
1 tsp vanilla
1 tsp baking soda
Pinch of Salt
1 1/2 cups of all-purpose flour
No need for a mixer for this recipe. With a wooden spoon (or I used a potato smasher) mix butter into the mashed bananas in a large mixing bowl. Mix in sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in. Add the flour last, mix. Pour mixture into a buttered 4 x 8 inch loaf pan. Bake for 1 hour at 350 degrees. Cool on a rack. Remove from pan and slice to serve.
*Bethany’s note: When I add the salt, I also add some cinnamon. Before putting in the pan, I add finely chopped walnuts and chocolate chips.
Seriously. It is soooo good. It is a steep 9 WW Points Plus per slice, but it is worth it. Accompanied with fruit, it is a very filling breakfast, and lunch…..
Which is good, because when I make it, I eat it for breakfast and lunch until it is gone.
