Whole30 R2 D5

We had the day off school because of the low temperatures, and we found out last night. That’s the best case scenario if you are a teacher, in case you didn’t know. πŸ˜‚πŸ˜‚πŸ˜‚πŸ˜‚

Henry and I slept until 7:15 and it was glorious. He usually wakes up at 6:00. I had the brilliant idea of putting blankets over the windows to see if that would help the situation. I’m not sure if that was what made it work but I’ll take it. We laid in bed until 9:15 and then came down for my coffee and his breakfast. He was so hungry he told me he wanted macaroni and cheese, pierogi’s, milk, water, cheese and oh yeah, an apple. He settled for pancakes and milk.

As far as whole 30 I had an RX bar for breakfast with my bulletproof coffee which isn’t enough food. I knew it was more of a snack and I’d need an extra snack or meal at some point.

Henry and I had a play date with our BFF’s at 1130 then we ran some errands in the bitter cold. Henry was a real trooper and we got home at 2:45 for a late lunch. I just threw together a bunch of leftovers from this week- a little hash, mashed sweet potatoes, and the last of the pepper salad. For dinner I made spaghetti. I used sauce from Trader Joe’s and added mushrooms, garlic, red pepper flakes, and onions. I served it to my parents and husband over spaghetti noodles and I had mine over assorted spiralized veggies. I also roasted some Brussels sprouts that needed to be cooked. They were so delicious.

And just now, I had 1/2 a sweet potato with ghee and a chomps stick because I was very very hungry. I feel good now. My meal timing wasn’t great today, tomorrow i will try to do better.

Here’s my dinner. Yummmmmmmy. And so easy.

Also, in other news, I am a resolution person. I know a lot of people are anti-resolution and hate on them but I like them. For me, it is my first reset of the year, followed by Lent, and then the beginning of summer. And then I start all over again the next year. My resolutions are a list of things I’d like to do to become the person I want to be. I’m keeping those personal, but one thing I really want is for 2018 to be the year of experiences. I want to start doing things and going places. My mental health has stopped me from doing so many things in recent years and I’m feeling better every day. So, my first exciting scheduled experience is going to California to visit my BFF, Tracy. We never get our one on one time any more and i haven’t been out there in a long time. She generously and graciously bought my ticket and I am heading out there the week after school gets out and I can hardly wait!!!!

Ok, I’m going to relax! Happy Friday night.
