Whole30 R2 D7

The most amazing thing about today was this.

Tostones. Fried plantains. I have seen them for ages on food instagrams and blogs but have never tried them. Holy crap. They were delicious. And compliant. And definitely something that can only be made once a week. Hahahahaha.

Some other eats:

Today I worked on cleaning out our office and I am only about half way done. It’s one of those jobs that creates more jobs. So, I hope to be finished by the end of the week! I still am starting my new morning routine on Tuesday, only going to have to do it in another room. I’m going to do a short workout, and then get ready for the day. I hate being late every day and I hate being rushed and I’m hoping this helps.

The other thing I’m doing differently this year is I am staying at work late on Mondays, Wednesday’s and some Fridays. My mom is going to exercise class on Tuesday and Thursdays so this schedule should work for both of us. I need more time at school to be the teacher I want to be and I do NOT like to do work at home. So, that’s what I plan to do and I am happy about it.

I know it’s a lot of change but I feel up to the challenge and I feel like they will all help my quality of life.

    Thanks for the well-wishes!
    Shawn is making those plantains today. They look yummy!
    I am also trying to eat simple foods because that is how we normally eat.
