Man alive, I am one tired lady.
It is 6:40 and I am already in bed trying to stay awake until 8:00.
I have so much to do this week, I need to get a good night’s sleep so I can accomplish every thing I need to do.
I need to start walking, and finish the laundry, and do some cleaning.

I have had terrible sinus pressure this weekend, as the weather has gotten a lot warmer (although it is cold, again). So, I have been using the most wonderful and terrible thing in the world. A Neti-pot. If you don’t know what one is, google it.

If you have sinus issues, especially pressure, this thing is a god send.

Anyway. Time for me to go.
I am having trouble constructing sentences.

Do-Over

Well, I didn’t lose weight this week, but I also didn’t gain weight.
I just couldn’t get it together. Hopefully, I can this week.
It’s an old fashioned do-over like on the playground when we were kids.

I am having a hard time getting back into working out. I thought working out last weekend would help, but it didn’t. Maybe the warmer weather will help get me out and about.

I can only move forward from here and try to do better this week.

In other news, I went to see P!nk this week and it was amazing. My friends and I loved it so much, and we are all a little depressed that it is over. It went so fast, and she did such an awesome job. She has a new album and played songs from there, but she was sure to play songs that everybody loves, like “So What,” “Just Like a Pill,” and “Trouble,” as well as many other hits. I wish all concerts were like that. I love when singers/bands play their popular songs. I mean, that is what people are there to see, aren’t they?!

It was funny, we were looking for our seats and saw the Huntington Club and said, “Oh, that’s for fancy people,” and kept looking for our seats. Turns out…we are fancy people. Our seats were in that area. They were nice and cushy and roomy.

I can not tell you enough how awesome that show was. And I am so envious of P!nk’s physique. Whenever somebody is in shape like that, I am always in awe of how easily they move their body, and without difficulty.

Well, I started using my pedometer again, and am aiming for 10,000 steps a day as part of my strategy to losing my first 30 lbs. I also am going to start packing my lunch the night before in hopes of saving morning time and making better choices.

Off to start my day…have a great Saturday!!

Another Snow Day!!

Well, we got a doozie of a snow storm last night. They have been building it up all week, and it delivered. Starting at about 11 last night, the snow started coming straight down. Lots of tiny flakes to make about 6 inches, I would guess. I had mixed feeling about this snow storm because tonight, my girlfriends and I are going to see P!nk in concert at a venue about 50 minutes away. So, the whole time the storm was predicted, I was hoping for enough snow to cancel school, but for it to stop early enough so the main roads would be clear for our drive to the concert. AND, it looks like that’s what happened. It stopped snowing early in the morning, and the treated roads are already looking good.

Here are some pictures from my yard. We have this very scary and VERY large pine tree in the back yard, and the snow has the branches weighed almost down to the ground when they are usually above our heads. I think this has terrified my dog, because she will not go out. She used to love the snow, but not today. The last picture is of her sitting in front of me all anxious-like with a slipper in her mouth.

I am going to do some grading today, read some magazines, and walk on the treadmill, and do my kettlebell work out. I’ll be honest, Monday and Tuesday were not good days with calorie count or exercise. I had a test done at the hospital yesterday that I was nervous about, and I think that contributed to it, but I can only take one day at a time. So, today is a new day.
(I guess I should mention that the test went fine!)

I am so excited to see P!nk tonight!!!

Continuous Improvement.

Well, day two of exercising and counting calories has been making me feel a lot a better about life in general. I haven’t been doing super great, but I have been doing…
Last night, after I had my calories done for the day, I had pretzels and dip. Boo! But, I still counted them out and measured them.
And today, I am a little over. But, still tracking every thing.
It’s the weekend, and I always do worse on the weekend. Hopefully, tomorrow I am able to stay in my calorie count.

I have walked both days (and even Friday). I didn’t walk that long or that fast, but I walked. I could tell today was even easier than yesterday. Although, my legs are killing me for another reason.

I cut it out of Weight Watchers magazine. It doesn’t look like much, but when you are completely out of shape, it makes it so that your legs hurt like nobody’s business. My inner thighs are soooo sore. Squats are difficult for me. But, it is a good hurt. I feel like I am heading somewhere.

Tonight for dinner I made pulled pork in the crock pot. It was a new recipe, and it was good, but not great. The meat was delicious, and tender, which helped. I served it on a kaiser roll, with cole slaw from the local fried chicken joint. I also served creamed corn from a can, which is one of my favorite foods ever, and I haven’t had it in a while because my husband doesn’t like it. I make it then add a bit of butter, sugar, salt, and pepper. Mmmmm. And also, we had Bob Evan’s mashed potatoes. I am so full right now.

Well, I am off to do a little grading. I’ve managed to procrastinate, and put it off until right now. 7:00 Sunday night. Oops.

Today is the Day

I woke up this morning, and said to myself, Today is the Day!! It is the day I get back to this journey of losing weight and taking care of myself. It was only one day, and it was challenging, and busy, but I did it.
I did cardio and strength training, and I even stayed in my calorie count after going to the most unhealthy restaurant in my town. Actually, it’s a local restaurant that has the best burgers in the world, and delicious steak fries. They have a “dinner menu” with entrees, but I have never gotten one of them. Tonight I got the chicken breast dinner with a baked potato, green beans, salad, and a roll. Delicious. And less calories than one of their burgers.

I did our meal plan for the week, and also grocery shopped. I *almost* put it off until tomorrow, but changed my mind at the last minute. I am SO glad it is over.
I am excited to try two new recipes this week. One is pulled pork, and one is a cheesy chicken. They are both made in the crock pot.

This week I am going to see P!nk with my girlfriends, and I am so excited. I even took a day off work, so I have a 4 day work week. Woot woot!!!

Right now I am on my couch catching up with my google reader, and watching the third episode of “Scandal,” the tv show. Does anybody watch that show?? It’s awesome and intense.

Looking forward to a relaxing evening. I am hoping to stay awake until 10!

Friday Night Burn Out

Man, oh, man, am I tired tonight. I am not sure why I am so exhausted, other than life has been a bit heavy lately. I was wishing I came home from work and wanted to do a million things, but that was not the case. I actually had a headache that I couldn’t shake. I walked on the treadmill for a short time – about 35 minutes – then I took a nap.
For dinner, we got pizza from the place across the street from our house. I also got a Greek Salad. I love Greek salads. This one had a bit too much feta for my liking.

Tomorrow I join my friend in a weight loss journey. I’ve been mentally prepping this week. I am ready.
Tired of being tired.

I kept a promise.

I did the thing I am worst at today – I kept a promise to myself.
I tracked my food on Fitness Pal, and stayed within my calories.
I exercised!!!! with a good friend.
I did work at work, and didn’t bring any home.
YAY.
It’s amazing how one day back on the wagon makes you feel so much better. Not to mention, when I got on the scale this morning for the first time in weeks, it was 2.1 lbs lower than I thought I was. So, I am already 2.1 lbs into my 30 lb goal. WOO HOO.

Today was a good day.
And, here is why…

* I was caught up with grading when I went into school this morning.
* I had a few kids in my room before school and I was able to help them without feeling rushed.
* My lesson plans were pretty laid back today.
* I tracked my calories.
* I ate fruits and vegetables.
* I went on a walk with my friend, Marianne.
* I am ’bouta make a good dinner.

This weekend we cleaned out my gramma’s assisted living apartment, as she has to move to the side of the home that is full time care. I found this picture of her when she was a baby. She has always been very ornery, or as she will tell you, she was a “brat.” This totally captures her ornery side.

I still have a lot of work to do for my UD class this week, but I am glad that it was a good Monday.

UPDATED: I can’t believe I forgot to mention the highlight of my day. My best girl, Ava, face timed me without me begging her to do it!!! It was a complete surprise!!!
I miss that girl!!

Stretch Goal

I am sick of tired of being sick and tired. I am not sure who I can credit that quote to – it was some comedian in the 90’s – but it is so true. While I’ve been going through infertility stuff, I have been paralyzed in all other aspects of my life, and I’ve decided that has to stop. I am doing what I need to do for that, but there is so much more to life, and I need to start living. I realized this after going out to dinner with my friends on Friday, then getting my hair done on Saturday morning. After doing both of those things, I felt better than I had in ages.
I have also scheduled many really fun concerts and trips in the next several months.

In March I am going to see P!nk with some of my girlfriends. At the end of March I am going to Houston, TX with Craig to see my brother and his wife, and more importantly, my niece!!! It’s a surprise to her, and I can NOT wait.

In April, I am going to see Bob Seger and The Silver Bullet Band with my parents, and their neighbors who are like family to us.

In May I am going to see The Avett Brothers with a group of friends we’ve seen them with the last two years.

In June, I am going with my bff Liz to Charlottesville, VA to go to some good restaurants, and hopefully see Kath or Matt at Great Harvest. We are avid followers, and think it would be really cool to see them in person.

In July, I am going to see Dave Matthews with Liz, also, and some more girlfriends.

In August I am going to see…wait for it…wait for it…. JUSTIN TIMBERLAKE AND JAY Z!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
And it gets even better, we have 9th ROW FLOOR SEATS!!!! Thank you, Beth FS for getting us that hook up. I can hardly believe it is even real.

So, the only thing that would make this all better than it is already is if I were more comfortable in my own skin. If I were to be more active, and eating better, and losing some weight. Because, as of right now, I am not doing any of those things, and I can tell it is starting to wear on me.

So, in education we have this thing called a “stretch goal,” that is your long term goal, that sometimes seems unlikely to be achieved until you break it down into smaller SMART goals. So, I am going to take a similar approach. I have a stretch goal of losing 100 lbs, but I am breaking it into 3 phases. First I will set a goal to lose 30 lbs, then I will try to lose 40 lbs, then the last 30. That way, it seems less daunting, and more manageable. I am going to blog about this journey as I go along. I will be using Fitness Pal app for my phone to count my calories, and plan to start my exercise with walking and Kettlebell workouts for weights.

Snow Day!!

Well, we have a snow day today, and I couldn’t be more thrilled about it. I have two months of mail to go through….

I also have hours of grading to do, and work for a class I am taking online at the University of Dayton.
I was feeling kind of sad this week, (things aren’t going well in the infertility front, and I’ll leave it at that), and so it was nice to have this surprise day off to do some stuff that I needed to do to help make me feel less behind the 8 ball.

On Wednesday night, we ordered pizza from the place across the street called Bada Bing Pizzeria. The store has been many things before, ice cream places, pizza places, deli’s, and we’ve tried most of them. Well, this pizza was delicious. In my town, there are only a few pizza places outside of chain pizza places. And, this is the only one that serves New York style pizza — my favorite style – and they have many different kinds! We had the one that had everything on it, and we LOVED it. But, the star of the show was their garlic knots. They are knots of dough saturated in garlic butter. They are so freakin’ delicious, and I am quite sure I could feel my arteries clogging…

So, I am thinking about joining my friend Liz, over at lifelessonsbyliz in her weight loss journey. I’ve been in kind of a rut emotionally, and weight loss wise, and I realize that is not helping things at all. So, look for that to start in the next few days. I’ve missed you guys. I’ve just been a bit of a downer lately, so I didn’t want to be a whiney blogger. HA HA. : )

Not an Ash Wednesday Recipe

So, today for dinner, I made one of the recipes I had clipped from a magazine. I have approximately 500 recipes clipped from magazines, but I am really bad at making those recipes. Even though I have them in a binder that is organized by category.
For real.

It was in my meal plan for the week, and I made the meal plan forgetting about it being Ash Wednesday. We are on a strict budget, especially with a few things extra this month (paying for concert tickets, throwing a shower), so even though it had meat in it, I still made it, because that is what I had the groceries to make.
It was kind of laborious. Read: Lots of chopping. (and I do NOT like chopping)
But, it was so worth it. It is SO delicious, high in protein, and pretty good fiber content.
I had cut it out of Better Homes and Garden’s magazine.

Anyway, without further ado…here is the recipe.
And as I am reading the recipe, I realized the part I forgot!! Blast it!! It was the thing I was looking most forward to – crunched up dorito’s on top. Maybe tomorrow, when I have leftovers.

Chicken Enchilada Pasta

1 12 oz package dried jumbo shell macaroni (I used rigatoni because my husband went to the grocery store and had a hard time finding the jumbo shell macaroni)
3 cups green and/or red sweet peppers chopped (I used several small sweet peppers to make up the 3 cups)
1.5 cups chopped red onion (I used 3/4 of a GIANT red onion)
1 Jalapeno, seeded and chopped
2 tbsp vegetable oil (i used olive oil because I didn’t read this part, oops)
2 cups chopped cooked chicken (i cooked chicken tenderloins in a skillet, however, I think this recipe would be fine without chicken)
1 16-oz can refried beans (I used a 15 oz can of refried black beans, because that is what I had)
1/2 of a taco seasoning packet
2 10 oz cans enchilada sauce (I used red sauce)
1 8 oz package shredded Mexican style four cheese blend (I probably used about half of this amount, maybe even less)
1 cup sliced green onions

and the part I forgot: 2 cups nacho cheese flavored tortilla chips, crushed

1. Preheat oven to 350. Cook pasta according to package directions; drain. Rinse; drain. Set aside.
2. In skillet, cook sweet peppers, onion, jalapeno, and 1/4 tsp salt in hot oil over medium heat for 5 minutes or until tender.

3. Stir in chicken, beans, taco seasoning mix, and 1/2 cup enchilada sauce. Cook and stir 5 minutes. Stir in 1/2 cup each cheese and green onions.

4. Divide filling among shells. (I didn’t have shells, so I just mixed it with the rigatoni in the 13 x 9 pan) Spread 1 cup of the remaining enchilada sauce in 3 quart rectangular baking dish. Arrange shells on top of sauce. Drizzle with remaining enchilada sauce.

5. Bake uncovered, for 30 minutes. Uncover; sprinkle with remaining cheese. Bake 5 minutes more or until cheese is melted. Sprinkle with chips and remaining green onions.

Serve with sour cream or guacamole.

PS Beth FS is seeing Maroon 5 tonight!!! And, may or may not be eating a brisket and macaroni and cheese sandwich. Poor thing, she is under the weather, though. Hope she was able to rally and enjoy the concert.
